I think I know the answer to this question, but I'll ask anyway. Can you dehydrate something too much? I was doing Laurie's sausage and red pepper pasta sauce and I left the tomato sauce in too long. I took the sausage and red pepper out, but then forgot about the tomato sauce and it was in there for about 24 hours. Should I just make a new batch of sauce or can it still be rehydrated?

I'd think you'd be OK if it's just the sauce. I've over dried tomato and spaghetti sauces before and they've always come back fine.

Put it in a blender to make it into powder. That'll help it rehydrate quicker. Just add it slowly to a small amount of warm water while stirring. Add additional water only as needed so it stays thick enough for your meal.

It can still be rehydrated... just do what Tripper says and make it into a powder. I'll admit to forgetting the odd batch of sauce on the dehydrator from time to time.
