Banana Boats
A treat reminiscent of childhood

When I was a youngster I participated in a 4-H Outdoor Living course. We made these treats on a 5 day camping trip. I had forgotten about them until a few years ago, when my mother asked if I still made banana boats. Here is the recipe.

Ingredients:
Bananas - with the skins still on
miniature marshmallows
chocolate chips or chocolate bar pieces
chopped nuts (optional)
aluminum foil
one campfire with a good coal bed

Method:
Take the banana, with the skin still intact, and slice in half lengthwise. Be careful not to slice right through the bottom skin. You will have something that is similar to the shape of a boat. Put your fingers in the cut and gently open. Fill with the remaining ingredients and push the two sides back together. Wrap in aluminum foil and place directly on the hot coals for about 20 minutes.

Remove from the fire, open the packet and enjoy. You can eat the banana right out of the foil.

Notes:
Modify the filling to suit your tastes. My preference is broken Skor™ bars (chocolate covered butter toffee), pecans and marshmallows.
Remember to always recycle your foil and if you are in the back country be sure to pack it out.
