Stratton Lake Spaghetti Sauce

Stratton Lake is a long lake near Algonquin Park's Barron Canyon. After a long morning in the canoe we stopped at High Falls, just off the lake, to play on a natural waterslide. By the time we got to camp we were very tired and hungry. This recipe is a perfect meal for the end of such a day. If you have the energy, make a little Focaccia or serve with garlic bread.

Ingredients:

¼ cup of extra virgin olive oil
5 gloves of garlic crushed or minced
1 small or medium onion finely chopped
1 can of diced tomatoes
6 - 14oz cans plain tomato sauce
2 tsp dried sweet basil
2 tsp salt
2 tsp pepper
1 tsp crushed chili peppers

Pour olive oil in the bottom of a large pot or Dutch oven and heat on medium. Add the onion and garlic, then sauté being careful not to brown the garlic. Add the tomatoes and spices. Simmer for a few hours until it thickens, stirring occasionally. Let cool slightly.

Cut out parchment paper sheets to fit your dehydrator trays. Place one cup of sauce on each parchment paper lined tray and spread to about ¼ inch thick. Turn the dehydrator to the manufacturers recommend setting for fruit leather. Dehydrate for approximately 10 hours (the time will depend on your dehydrator). The spaghetti will be done when it becomes dry leather. Take 2 sheets and rip them into small pieces and store in zipper bags. Be sure to mark 2 cups on the outside of the bag.

To re-hydrate take the contents of the bag and place in a 1 litre (32 oz) Nalgene bottle. At lunch add liquid to the 500 ml (2 cup) mark on the bottle. By dinner the sauce will be re-hydrated. Just heat it up and cook some pasta. Sprinkle a little parmesan cheese on top and enjoy.

Note: Pastas such as Fusilli (corkscrews), Farfalle (bowties), or Penne Lisce (lined tubes) travel best and they stand up to being repeatedly dropped from the food hanging spots. If you do take spaghetti be sure to wrap it well and place it in a plastic container to prevent the noodles from breaking.
